Pasta Confidential: the way to make a pasta sauce not from scratch...

Working full time does not afford me the luxury of making all my meals from scratch - and let's face it, a lot of meals in general.  Also, I am not very good at cooking for one person and especially when I cook stir-frys or pasta or things like that, it's a struggle to make only enough for one. 

So I have created a delicious, nutritious (?), quick and easy way to make pasta after work - and it tastes fantastic! When  I make pasta,  I make a lot which I can then heat up later or freeze for future meals.  Here is a look at my creation:

Step 1: I start cutting up my ingredients, putting the water for pasta on to boil about halfway through my chopping. I usually have a lot of different kinds of veggies already cut in the freezer - like peppers, brocoli and spinach for this recipe.


I chopped onions and garlic to brown the chicken with. I cut one large chicken breast. I throw all that in together to brown while I continue cutting up the rest of my veggies. 

For this recipe, I included the following veggies: mushrooms, tomatoes, red and yellow peppers, broccoli and spinach.

I like to have all my cutting down and put into bowls which makes it easier to just add them in when I need to while cooking.

Step 2: I let the chicken brown in olive oil with the onions and garlic adding some Italian seasoning. Covering to cook. 


I love this seasoning because it has all the things I want like oregano, basil, garlic etc without having to use a bunch of different spice containers.


Step 3: About halfway through the cooking, I add the veggies that need a bit more time to cook like the broccoli and cover to cook.

The chicken should look like this when you add the crispier veggies like broccoli.

Step 4: I add the rest of the veggies, stirring and then covering to let them all cook and mix. I usually add some more Italian seasoning.


Step 5: After the veggies and chicken are well cooked, I can do one of two things: add a canned sauce like the ones below or skip this step. Depending on my mood, I can either.

Today I decided to add the Vodka Sauce jar. It is a really nice cheesey, creamy sauce.

Sometimes at this stage, I will add a dash of wine. Tonight I didn't, but if I was not using a canned sauce at all, I would definitely add a little wine and olive oil to the pasta. Which brings me to...

Step 6: After draining the pasta, I add it all to the pan with the veggies, chicken and sauce. I stir it all together and let it sit and cook for a little bit.


TIP: I have been told by an Italian friend never to rinse the pasta because it makes it more difficult for the sauce to stick to the pasta.  

Then voila: lovely, yummy meal...


It takes about 20-30 minutes from start to finish (you can add a few minutes in there for browning the chicken and cleaning up) 

TIP: I hate cleaning up a seriously messy kitchen. My mum always told me that I should clean while cooking and I have definitely adopted that style. While the meat is browning or the veggies are cooking, or whatever, I do dishes.

Rainy Monday = Shiny Dress

Good day lovelies!

I woke up yesterday morning to see a very rainy day ahead and much of the same in the upcoming forecast. This depressed me because I wanted to wear one of the new dresses I bought for the spring / summer season and since it had been pretty nice last week, I was hopeful. So when I saw the dismal weather - it was wet and cold, I said, what the hell, I am gonna wear my gold sparkly dress anyway! 

So here I am: (in my messy office - please ignore!)

These are flats I bought many years ago from Payless. They are great and really comfortable.




I paired my outfit with my trusty large carry-all brown bag. I wish I could say it was some great designer... it is in fact from Avon. I love it though and it looks fantastic with everything!

Easy Peasy Salad

Good evening lovelies,

I love to cook... and eat.... but I don't always have enough time to cook as much as I would like to. My fav go-to meal is a salad - and it is so quick, yummy and nutritious. I usually grill a chicken breast on  my trusty foreman grill - using some spices like garlic and oregano or some southwestern spice mix. I then put together some lettuce and veggies and add dressing. Its quick and easy and great.

Now the dressing is very easy to make. I cannot take the credit for it however, my bff L taught me this recipe.


You just mix olive oil, balsamic vinegar and Dijon mustard. Just add to taste. I like to add a bit more balsamic then mustard and oil but it can all depend on your own preferences.


L likes to use Balderson cheese to the salad - and I also choose to do so. It is a wonderful addition to this salad. The cheese has a strong tart taste but it goes very nicely with the balsamic.


As for the veggies, I add whatever I have in the fridge. In tonight's salad, I added mushrooms, cucumbers, carrots and some strawberries along with the lettuce. The I cut up the hot chicken and toss it in!

Met Gala 2011 - Year of the Macs

Good Evening lovelies,

This year's Costume Institute Gala celebrated fashion. They also celebrated the life of Alexander McQueen - a fashion powerhouse who left us too early. I really do love McQueen. I think the new head designer for the label Sarah Burton is also doing a wonderful job (see both Kate Middleton's wedding dresses and Pippa Middleton's bridesmaid dress AND the entire spring runway of McQueen Fabush!). Many celebs chose to wear his styles tonight. Stella McCartney was also a celeb favourite. I love her! It has been quite the year for the Brits! (Royal Wedding... wearing McQueen and McCartney... errr... yeah! haha)

Many celebs rolled out rockin the latest trends this season from colour to neutrals to 70s inspired looks. Check out some of the fashions celebs worked some real lovelies. These are the ones that I, in particular, found gorge:

Since Blake is the new face of Chanel, it is only fitting that she be Karl's date! I am a huge fan of Chanel and I love this dress. It is very riske and can only be worn by a few perfect peeps - aka Blake and she works it! Her new strawberry blonde hair colour rocks! I like the neutral shoe and the sparkly shoulder. It definitely has a 70s influence to it as is so popular this season. I really really like the swoopy, drappyness. It has a distinct grecian look to it.

I ADORE ADORE this dress. It is sooo beautiful and simple and looks so amazing on her. Love love love! She is a so stunning too. Wonderful job! It is showing off the colour trend of the spring / summer season.

Gwyneth's dress is very nice showing off a lot of leg and back (not shown in the pic above). It suits her and rocks the 70s trend. I like the neutral colour too with a little shine, but I have seen her in something like this before - I am thinking the white dress she wore to some awards show recently. I would like to see her in some colour... try a emerald green or bright blue babe!

 Usually this would totally not be something I would like but I really liked the feathery details in the bodice of the dress. It looks like feathers are cupping her breasts and it def works for her! I am not crazy about the colour but it looks very nice on her.

I thought this dress was all about Hollywood glam. It is just a beautiful, beautiful piece of work. I love the shine and sparkle of the long sleeved top. I love the belt cinching at her waist. I love the flowy skirt  and the slit adds just the right amount of sexy without being trashy. Just wonderful.

As I am sure you can tell, I like shiny things and this dress is shiny. It is probably my favourite dress of the bunch. I find it young, stylish and classic all at once. Her bodice fits perfectly: snug, accentuating without being trashy and super flattering. The sparkle design is just brilliant. The skirt of the dress flows out at the bottom creating a kind of bell that floats all around her. I just adore it. Wonderful job Miss Greene.

Lea Michele stepped out in this season's fav bright colour red. I find the shape of the bodice at the top intriguing. I am not sure it fits her quite right or it is a kind of modernist version of a strapless. Maybe it needs to be more fitted? Not sure... but the colour is lovely, the rest of the dress fits very nicely.

Now while I love Emilio Pucci, this dress and Beyonce, I am not sure combining them equates a win (or to be Charlie Sheenesque Winning). I'm sorry you beautiful girlie B, but you could not do some very important things in this gown, like walk and breath, so as much as I love it, its not for you, my friend.

Eva Mendes wore quite the 70s inspired number. I love the colour, love the one shoulder, love the long sleeves, love the pleats. I like the belt...on another dress. I feel like something else might have gone better.

Hot Mamas - Pregnant Stars on the Red Carpet

One thing I noticed when I was eyeballing all the lovely fashions at the Met Gala was how hot these two looked... and they are very preggers. I think this is how all pregnant stars should work it on the runway!

Royal Fashions - Hats, Hats, Hats!

Good evening lovelies!

As promised, here is a post about the royal wedding guest fashions. I want to focus on hats at the wedding. These hats are very traditionally English and are called fascinators - which is totally something I just learned!



Posh in a dress from her line and Becks in Ralph Lauren.

I thought the Beckhams' looks were wonderful. Posh looked so great - she is preggers and her dress was wonderful for that. Also Becks looked very dashing!!

These are very lovely girls! Obvs related to Princess Diana!! And I think their fascinators are very striking and edgy without being nuts. Which brings me to these gems:

Rihanna  wore this Stella McCartney stunner to the Met Gala. This is quite the dress.... very.... hmmm.... exposed you might say...

I think the dress is growing on me. She, of course, looks fantastic as usual. Her body is slamming!! I like a slit on a dress as much as anyone does but I am not sure about it... Also, the hair is def not my fav Rihanna look.
